They have the opportunity to taste ten different labels, discovering expressions of both freshness and maturity, as shaped by the slopes of Mount Paiko in Goumenissa, where the estate-owned vineyards are located.

Dry White / Roditis

Retsina Appellation by Tradition / Amyndeon, Goumenissa and selected vineyards in Macedonia

Vinification: Traditional white vinification in stainless steel tanks under strict temperature control. High-quality fresh pine resin is added during alcoholic fermentation to enhance aromatic complexity.

Tasting Notes: Pale yellow with greenish hues. Expressive aromas of pear, green apple, and melon, layered with subtle notes of lime, Chios mastic, and fresh pine resin. Fragrant, crisp, and well-balanced, with a refreshing, summery character.

Tear of the Pine

Dry White / Assyrtiko

Retsina Appellation by Tradition / Goumenissa

Vinification: Alcoholic fermentation in oak barrels of various origins and types, followed by 6 months of maturation on the lees.

Tasting Notes: Yellow in color with golden highlights. Aromas of citrus fruits set against a backdrop of vanilla and brioche, accented by herbal notes of rosemary, thyme, and ginger. Subtle minerality, refined acidity, and a strikingly long finish. Barrel aging adds further complexity and depth.
